Nachos:
• 1 bag (10-12 oz) tortilla chips
• 1½ cups shredded cooked chicken (rotisserie or grilled)
• 2 cups of Kraft Signature Shreds Cheddar
• 1 cup black beans, rinsed and drained
• ½ cup fresh pineapple, diced
• 2 green onions, sliced
• 1 small jalapeño, thinly sliced (optional)
Jerk Sauce:
• 3 tbsp jerk seasoning (store-bought or homemade)
• 2 tbsp olive oil
• 2 tbsp lime juice
• 1 tbsp honey or brown sugar
Toppings:
• Fresh cilantro, chopped
• Sour cream
• Fresh lime wedges
• Avocado slices
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, whisk together jerk seasoning, olive oil, lime juice, and honey/brown sugar.
3. Toss shredded chicken with half of the jerk sauce. Set aside the remaining sauce for drizzling.
4. Line a large baking sheet with parchment paper. Spread tortilla chips evenly over the sheet. Layer with seasoned chicken, black beans, pineapple, and shredded cheeses.
5. Bake in the oven for 8-10 minutes or until the cheese is melted and bubbly.
6. Remove from the oven and sprinkle with green onions, jalapeños (if using), and cilantro.
7. Drizzle with the remaining jerk sauce and serve with sour cream, lime wedges, and avocado slices or guacamole on the side.
